
Ingredients:
– 1 onion chopped
– 2-3 cloves garlic crushed
– Half kilo carrots chopped
– 2 medium potatoes
– bunch of fresh coriander
– 1 tsp ground coriander
– 1/2 tsp cumin
– 1/2 tsp turmeric
– 1 litre chicken stock

Method:
Fry the onion and garlic in a large pot until soft. Then add in your spices and stir for 2-3 mins.
Add in your chopped carrots and chopped potatoes (I keep the skin on) and your stock. Leave to simmer for about an hour until the carrots are soft.
Then add in the fresh coriander and use a hand blender to blend all the ingredients together. Serve with some fresh coriander on top.
