
Ingredients:
250g butter
165g caster sugar
165g brown sugar
335g plain flour
1 egg
130g pistachios
170g white chocolate chopped
1 tsp bicarbonate soda
Method:
- Beat the butter and 2 sugars together.
- Then add in the egg and beat in.
- Sieve in the flour & bicarbonate soda.
- Chop up the white chocolate into chunks and chop the pistachios into smaller pieces.
- Stir in the white chocolate and pistachios into the mixture then roll into small balls. Place on a baking tray with parchment paper. Bake for approximately 15 mins at 180°C.
